Ice Cream Cake Cups

Eating ice cream out of a bowl is all good. But what if you could eat the ice cream and then the bowl as well? This sounded like a recipe for happiness and so I made some.

To create the cups make your favorite cake recipe or simply buy a packet mix. Once you’ve mixed the ingredients together, add the batter to a cupcake tray and cook them as per the recipe. Remember to grease the pans or use patty pans, otherwise, it is hard to get them out without destroying them.

Once they’re cooked, remove them from the oven and immediately use a suitably sized object to make a large indent into each cupcake. I used the bottom of a salt shaker but a spoon will do the job.

Once you’ve made an indent into each one, allow them to cool a little before turning out onto a wire rack to cool completely.

Allow the cups to cool completely before filling.

Once the cakes are completely cooled, refrigerate for an hour to get them nice and cool. This will help keep the ice cream from melting too quickly when you begin scooping.

Now you can fill your cups with your favorite ice cream. I used a vanilla ice cream as it goes with anything.

The last step before eating is to cover them in sprinkles, nuts or some chocolate ganache. Rose petals look good too.
